The first "Mine" in the Silver Spring Mining Company started back in 1995 when the Silver Spring Inn in Perry Hall was for sale. Focusing on their service, in addition to the quality of their food and family atmosphere, the success of two hockey camp buddies grew into two more locations, in Hunt Valley and Bel Air. And while you can't go underground and dig for gold, you can go table-side and and find gold on your plate. No, not in rock form, but in crab cake form! Did we strike it rich, or end up with fool's gold?  Only one way to find out!  Dig in and read on!

The Silver Spring Mining Company's Jumbo Crab Cake Platter consists of a 1/2lb jumbo lump crab cake, broiled and served with two sides. Platter can come in a single or double. A crab cake sandwich is also available with the same size cake, but you have the option of having the cake broiled or fried, and served with two sides. Your server will ask if you want tarter or cocktail. All crab cakes are market price.

The crab cake consists of large lumps of jumbo lump crab meat, with some broken pieces as well. The cake is saucy, but not too saucy. Binder appears to be mostly mayonnaise, with some breadcrumbs mixed in, as well as spices and red pepper.

The crab meat has a meaty flavor to it, but lacks sweetness. The binder doesn't have much flavor either, despite the spice. The main flavor of the binder is red pepper, although some of the spice does hit on the back end. Really could use a bit more spice in the mix. Lemon helps to coax some flavor complexity out, but for the most part the overall flavor is one note and muted. And while the cake is saucy, the binder does tend to get a bit eggy in some parts.

Overall, the crab cake wasn't bad, but wasn't knocking our socks off. Reduce the egginess of the binder and mix in a bit more spice, and this might be worth trying again. Using more flavorful crab wouldn't be such a bad idea, either.
