Crab cakes are made from jumbo lump crab meat, and they mean it. Cake consists of lots of jumbo lumps, along with some broken pieces. The crab itself has a nice sweet flavor. All of this crab is held together with a mayo/breadcrumb binder that takes on a eggy flavor and consistency. Very little spice mixed in.
Overall, the crab cake was very good. The crab flavor was key, and really came through. But there could have been a little more to it. The binder could have been a little less on the eggy side, and there could have been a little more spice mixed in to balance the flavor out. We do have to say that as far as crab cake sandwiches go, this is a really good one for a sandwich. The bread, lettuce, and tomato work well with the crab meat and binder flavor. But if it was served as a platter, the cake may not be interesting enough to hold your attention for very long.
